Hellfire Bluff's Xmas Gin is made specially for the festive season, the flavours of this new Christmas spirit are sure to bring out your Christmas cheer.

It features a secret blend of fruits and spices, including ginger, blood orange and allspice, as well as plenty of raisins for that authentic fruitcake taste

To celebrate the coming of the new season we have crafted a white from chenin blanc and riesling, fermented on skins for 75 days and matured in oak for 60 days. Bottled unfined, unfiltered with no added sulphur.

Fruit from vineyards in the Coal River, Derwent and Tamar Valleys, the North West and the d’Entrecasteaux Channel. Predominantly whole berry, 12% whole bunch including a carbonic component, natural yeast, held on skins for 16-21 days. Pressed directly to and matured in oak (5% new). Bottled unfined and unfiltered.

Fruit from two vineyards in the Coal River Valley (Clarence House and Nocton), picked at 12.5 baume, skin soaked for 12 hours, 90% naturally fermented in tank and 10% naturally fermented in oak before being matured on lees. Bottled unfined and filtered.

Product Description
Fruit from White Rock vineyard in the North West, picked between 11 and 11.5 baume. A novello red made from Dornfelder (50%), Pinot noir (25%), Riesling (15%), and Chardonnay (10%). Co-fermented with one third whole bunch Dornfelder on top of whole berries. Bottled unfined, unfiltered with no added sulphur. Alc 12.5%

This dornfelder is from a single vineyard in the north west, predominantly whole berry, 5% whole bunch, natural yeast, pressed to and matured in oak. Bottled unfined and unfiltered.

Tasting Notes
Intense deep colour. Aromatics of rich blackberries and anise. Dusty mouth-filling tannins, precise acidity.

The base for our Vapour Infused Gin is made simply, from pure Tasmanian rainwater and organic cane sugar. After double distilling, and charcoal filtering, we vapour infuse our base with carefully chosen botanicals. The subtle flavours of locally grown pepper berry leaves, Oyster Bay pine, lemon and lavender are blended with lemon myrtle, grapefruit, juniper, coriander and liquorice root to create a uniquely Tasmanian gin experience.
